This week we received a very large order of apples from a friend who was fundraising for his daughter’s ringette league. First off, our family is obsessed with apples. No word of a lie, we each have an apple every single morning. So, when I found out about the apple fundraising of course I was on board!
Back onto Pinterest I went for inspiration, obsessively pinning apple recipes. I was low on time last Sunday and No Bake Energy Balls were jumping out at me! I found a simple recipe to work with, made some personal flavour tweaks and came out with these delicious bundles of pure apple joy.
Super quick to make, no actual baking required and I already have requests for more!
- 2 cups old-fashioned oats
- 1/4 cup ground flaxseed (I substituted with this ground chia & flaxseed combo blend)
- 1/4 cup hemp hearts ( I used this one)
- 3/4 teaspoon cinnamon
- 1/2 cup almond butter
- 1/4 cup honey
- 1 teaspoon vanilla extract
- pinch of salt
- 1 cup grated fresh apple
Mix all the ingredients together (I just used my hands) and pop in the fridge for about 15 minutes before taking out and rolling into balls. I then stored the balls in a tupperware and left in the fridge for little hands to quickly devour the entire batch!
